Best Summer Veggies

eggplantOne of the sweetest part about being a New Englander is when the local summer crops come in.  We finally don’t get that truck-hardened produce anymore.  I am always envious of those of you in the Southern climbes with your elongated growing season.

Here are a list of some of the best fruits and vegetables to try, eat ‘em raw, eat ‘em lightly sauteed or roasted, but most of all  eat ‘em often.  Most health organizations recommend between 5 and 9 servings of fruits and vegetables a day.  A serving is 1 cup raw or 1/2 cup cooked.

  • arugula
  • avocados
  • bell peppers
  • blueberries
  • cucumber
  • cherries
  • corn
  • eggplant
  • strawberries
  • tomatoes
  • watermelon
  • zucchini

Of course, it’s best to eat organic.  To figure out the most important fruits & veggies to eat organic see my earlier post on the “Dirty Dozen.”

Feel free to share any recipes here.  My personal favorite is sliced strawberries, blueberries and a little whipped cream for dessert.

    Agreed, grateful to live amidst the farmer’s markets! One of our faves for summer is simply buying in season (bell peppers, zucchini, and eggplant as you mention here), brush lightly with evoo, season with salt and pepper and toss on the grill.

    So much easier and tasty and love not eating yecky mayonnaise drenched vegetable salads! -Christine

    Being one of those southerners, I do enjoy the harvest starting in mid-spring through about now. One of my favorites is zucchini and squash from the garden. I either slice them lengthwise into quarter-inch slabs and grill them after lightly brushing with olive oil, or I slice them into quarter-inch disks and cook on the stove with some onion. Heavently!
